INGREDIENTS:
- 2 tablespoons vegetable oil
- 1/2 onion, diced
- 1 clove garlic, minced
- 1/2 cup chopped ham or cooked sausage (optional)
- 1/2 cup frozen peas and carrots
- 1/2 cup cooked rice
- 2 eggs
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
INSTRUCTIONS:
- Heat the vegetable oil in a large skillet or wok over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the ham or sausage (if using) and cook until browned.
- Add the peas and carrots, rice, soy sauce, sesame oil, salt, and pepper. Stir to combine.
- Push the rice mixture to the sides of the pan and crack the eggs into the center. Cook until the eggs are scrambled and cooked through.
- Stir the eggs and rice mixture together until well combined.
- Serve immediately and enjoy!
TIPS:
- For best results, use day-old rice. This will help to prevent the rice from becoming sticky.
- If you don't have ham or sausage, you can use another type of protein, such as cooked chicken or tofu.
- Feel free to add other vegetables to your fried rice, such as broccoli, bell peppers, or mushrooms.
- For a spicier fried rice, add a dash of Sriracha sauce or chili powder.
VARIATIONS:
- Kimchi fried rice: Add 1/2 cup of kimchi to the rice mixture and stir to combine.
- Pineapple fried rice: Add 1/2 cup of diced pineapple to the rice mixture and stir to combine.
- Avocado fried rice: Top your fried rice with sliced avocado before serving.
