INGREDIENTS:

  • 4 slices bacon, chopped
  • 1 large onion, thinly sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh chives



INSTRUCTIONS:

  1. Cook the bacon in a large skillet over medium heat until crisp. Remove the bacon from the skillet and drain on paper towels.

  2. Add the onion to the bacon grease in the skillet. Cook over medium heat, stirring occasionally, until the onions are caramelized, about 20 minutes.

  3. Stir in the olive oil, salt, and pepper. Cook for 1 minute more.

  4. In a medium bowl, combine the cream cheese, sour cream, Parmesan cheese, and chives. Stir in the caramelized onions and bacon.

  5. Serve immediately with crackers, chips, or vegetables.
