INGREDIENTS:
- 1 pound ground beef
- 1 tablespoon taco seasoning
- 1 (15-ounce) can refried beans
- 1 (16-ounce) bag tortilla chips
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup chopped tomatoes
- 1/4 cup chopped red onion
- 1/4 cup sliced black olives
- 1/4 cup chopped jalapeno peppers
- 1/4 cup sour cream
- 2 tablespoons chopped fresh cilantro
Preheat oven to 400 degrees F (200 degrees C).
Cook the ground beef in a skillet over medium heat until browned. Drain off any excess grease.
Stir in the taco seasoning and refried beans.
Spread the tortilla chips on a large baking sheet.
Top with the beef mixture, cheddar cheese, Monterey Jack cheese, tomatoes, red onion, black olives, and jalapeno peppers.
Bake for 10-15 minutes, or until the cheese is melted and bubbly.
Serve with sour cream and cilantro.
For a more flavorful beef mixture, add a diced onion and bell pepper to the skillet when cooking the ground beef.
If you like your nachos extra cheesy, add another layer of cheese before baking.
