INGREDIENTS:


  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 1 (15-ounce) can refried beans
  • 1 (16-ounce) bag tortilla chips
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup sliced black olives
  • 1/4 cup chopped jalapeno peppers
  • 1/4 cup sour cream
  • 2 tablespoons chopped fresh cilantro

INSTRUCTIONS:

  1. Preheat oven to 400 degrees F (200 degrees C).

  2. Cook the ground beef in a skillet over medium heat until browned. Drain off any excess grease.

  3. Stir in the taco seasoning and refried beans.

  4. Spread the tortilla chips on a large baking sheet.

  5. Top with the beef mixture, cheddar cheese, Monterey Jack cheese, tomatoes, red onion, black olives, and jalapeno peppers.

  6. Bake for 10-15 minutes, or until the cheese is melted and bubbly.

  7. Serve with sour cream and cilantro.



TIPS:

  • For a more flavorful beef mixture, add a diced onion and bell pepper to the skillet when cooking the ground beef.

  • If you like your nachos extra cheesy, add another layer of cheese before baking.

  • Get creative with your toppings! Other popular options include guacamole, salsa, and chopped green onions.
