INGREDIENTS:

  • 8 corn tortillas
  • 1 tablespoon olive oil
  • 4 eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup refried beans
  • 1/2 cup salsa
  • Chopped cilantro, for garnish
  • Sour cream, for garnish

INSTRUCTIONS:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Heat the olive oil in a large skillet over medium heat.
  3. Crack the eggs into the skillet and cook to your desired doneness.
  4. Top each egg with cheese.
  5. To assemble, place a tortilla on a baking sheet. Top with refried beans, salsa, and an egg.
  6. Bake for 10 minutes, or until the cheese is melted and the tortillas are heated through.
  7. Garnish with cilantro and sour cream and serve immediately



TIPS:

  • For a spicier dish, add a dash of hot sauce to the salsa.
  • If you don't have refried beans, you can use black beans, pinto beans, or a can of beans, drained and rinsed.
  • To make your own salsa, combine 1 (14.5 ounce) can diced tomatoes, 1/2 cup chopped onion, 1/4 cup chopped cilantro, 2 cloves minced garlic, 1 tablespoon lime juice, and 1 teaspoon salt in a blender. Puree until smooth.
  • Serve with your favorite breakfast sides, such as fruit, hash browns, or toast.
