INGREDIENTS:
- 8 corn tortillas
- 1 tablespoon olive oil
- 4 eggs
- 1/2 cup shredded cheddar cheese
- 1/2 cup refried beans
- 1/2 cup salsa
- Chopped cilantro, for garnish
- Sour cream, for garnish
INSTRUCTIONS:
- Preheat the oven to 350 degrees F (175 degrees C).
- Heat the olive oil in a large skillet over medium heat.
- Crack the eggs into the skillet and cook to your desired doneness.
- Top each egg with cheese.
- To assemble, place a tortilla on a baking sheet. Top with refried beans, salsa, and an egg.
- Bake for 10 minutes, or until the cheese is melted and the tortillas are heated through.
- Garnish with cilantro and sour cream and serve immediately
TIPS:
- For a spicier dish, add a dash of hot sauce to the salsa.
- If you don't have refried beans, you can use black beans, pinto beans, or a can of beans, drained and rinsed.
- To make your own salsa, combine 1 (14.5 ounce) can diced tomatoes, 1/2 cup chopped onion, 1/4 cup chopped cilantro, 2 cloves minced garlic, 1 tablespoon lime juice, and 1 teaspoon salt in a blender. Puree until smooth.
- Serve with your favorite breakfast sides, such as fruit, hash browns, or toast.
