INGREDIENTS:

  • 1 pound pork tenderloin, trimmed and cut into 1-inch cubes
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

INSTRUCTIONS:

  1. Preheat grill to medium-high heat.

  2. In a large bowl, combine pork cubes, zucchini, yellow squash, red bell pepper, red onion, olive oil, dried herbs, salt, and pepper. Toss until evenly coated.

  3. Thread pork cubes and vegetables onto skewers, alternating between each ingredient.

  4. Grill skewers for 8-10 minutes, turning occasionally, until pork is cooked through and vegetables are tender.

  5. Serve immediately with your favorite dipping sauce or side dish.


TIPS:

  • If using wooden skewers, soak them in water for 30 minutes before grilling to prevent them from burning.
  • You can also use a grill pan or indoor grill to cook the skewers.
  • For a more flavorful marinade, combine olive oil, lemon juice, garlic, and your favorite herbs and spices. Marinate the pork cubes for at least 30 minutes before grilling.
