INGREDIENTS:

  • 2 (8-ounce) packages cream cheese, softened
  • 1 (8-ounce) can crushed pineapple, drained well
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped green onions
  • 1 teaspoon lemon-pepper seasoning
  • 1 teaspoon seasoned salt
  • 2 cups chopped pecans, divided
  • Assorted crackers

INSTRUCTIONS:

  1. In a large bowl, beat cream cheese until smooth.

  2. Stir in the pineapple, green pepper, onions, seasonings, and 1/2 cup pecans.

  3. Shape cheese mixture into a ball.

  4. Wrap and refrigerate overnight.

  5. Just before serving, roll the cheese ball in the remaining pecans.

  6. Serve with crackers.



TIPS:

  • For a sweeter cheese ball, add 1/4 cup of confectioners' sugar to the cream cheese mixture.
  • For a spicier cheese ball, add 1/4 teaspoon of cayenne pepper to the cream cheese mixture.
  • Garnish the cheese ball with fresh parsley or pineapple wedges.
